Are you missing the crackle and glow of a camp fire? Are you missing the flavor of a freshly made s’mores? We have solved part of the problem for you. Although we can’t provide a roaring fire, we can give you a recipe for a s’mores ice cream sundae. I had a s’mores ice cream sundae in Manila a few weeks ago, and it was so delicious. I knew you would love it, too. It is really a simple dessert or treat to put together. I am not going to advise you on how to roast your marshmallows. I am just going to tell you how I roast mine. It is not very professional. I simply put them on a fork and hold the fork over the open flame of one of the burners on our gas range. That gets the job done. Roasting two marshmallows is the only “cooking” you have to do for this recipe unless you make your own chocolate syrup (the recipe is here) like I did.
Ingredients
- Serves 1
- 2 graham cracker squares
- 2 to 3 scoops of ice cream, any flavor
- Chocolate syrup
- 2 roasted marshmallows
- Graham cracker crumbs
- Whipped cream (optional)
Instructions
- Put the graham crackers in a bowl and top it with a few scoops of ice cream
- Drizzle chocolate syrup over the ice cream.
- Add whipped cream to the top
- Sprinkle graham crackers crumbs over it all.
- Roast 2 marshmallows, put them on skewers, and put them in the ice cream.

The beauty of this dessert is that you can choose any ice cream flavor that you want. For this version, I used vanilla but wouldn’t hesitate to use strawberry ice cream, which is Mike’s favorite. I used the graham crackers with cinnamon sugar on top because I felt it added to the flavor. You can put a cherry on top of your whipped cream to make it even more special. I have to tell you that after taking the photos, I ate the entire sundae because Mike wasn’t here. That’s a perk of this job.
So, if you are thinking this is a weird time to offer up a recipe for s’mores ice cream sundae, maybe it will give you a little taste of summer when you are trying to stay warm. Eat this while sitting in front of a fireplace and pretend it’s your campfire.
