It’s that time of year again when many people start focusing on a very popular annual event – March Madness. You might love March Madness and join in the office pool and follow the wins and losses strategically. Or, you might be just mad because it’s time for March Madness.
However you approach the next few weeks, we have some great suggestions for you. These will work for you in front of the t.v. or in your man/woman cave where you are trying to get away from the whole mad scene.
Skinnygirl Margarita – I have written in the past about what a fan I am of this alcoholic beverage. It is low in calories and organic. It is easier to find now that the distribution area has expanded. In fact, after a friend gave me a tip, I bought a bottle at my local liquor store. (Pssst – The man who works there told me that a Skinnygirl Long Island Ice Tea is in the works.)
Macho Nachos – This recipe, by Paula Dean, is a great hit for any game day. But let me warn you, the calories that you save on the margaritas will be used on this dish.
Ingredients
- 1 can refried beans
- 1 large bag white corn tortilla chips
- 1 medium onion, chopped
- 1 cup shredded pepper jack
- 1 jalapeno, sliced crosswise, plus extra for garnish
- 1 can chili, or your favorite chili recipe
- 1 cup shredded Cheddar
- 1 cup sour cream
- 1 cup green onion, chopped
- 1 tomato, diced
Directions
Have all the prepped ingredients easily accessible to assemble nachos.
Preheat the oven to 350 degrees F.
In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos. On a large ovenproof platter, spread out a layer of tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with some onions, jack cheese, and jalapeno slices. Spoon on chili and top that with Cheddar. Repeat this layering process until ingredients are used up. Save some of the jalapeno slices for garnish. Place platter in the oven and bake until cheese has melted, about 5 to 10 minutes. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeno slices and serve hot.
Magazines – If you are in front of the tube, have a stack of magazines beside you so that if you get bored with the game, long time-outs, and numerous beer commercials, you can catch up on some of the latest trends. If you are hiding out in the cave, what better way to have some “me-time”, than with your favorite periodicals?
And last, but not least
Bubble Bath – Exhausted after cheering your team on? Relax in a tub of bubbles. Need something to do while everyone else is watching the game? What about a spa day starting with this treat.

I had a skinny margarita at TGI Friday’s last night. While they don’t mention it is made with this product, they advertise the drink to be just 130 calories. Pretty good for a margarita and it was very tasty and felt like I was drinking way more calories than they claim! I’m sold!!
