Four Super, Super Bowl Recipes

Happy Friday.  First, let me tell you that we had another recipe ready to publish for today, but at the last minute we put our heads together and decided to dig up some perfect game-day foods from our archives.  Each one of these recipes has been tested again, and again and are loved by women, men, dogs, and kids.  Well, the kids and dogs didn’t drink the alcoholic beverage, but they love the other three.  So, you can thank us now or later for solving your “What do I serve for the game?” dilemma.

MINI PIGS IN A BLANKET

This recipe was originally from The Neelys on the Food Network.

 

Ingredients

  • 1 (8-ounce) can original crescent dough

  • 1/4 cup Dijon mustard

  • 20 mini hot dogs or cocktail franks (I also got some nitrate free hot dogs and cut them up in small pieces)

  • 1 egg, lightly beaten

  • Poppy seeds or sesame seeds

Directions

Preheat the oven to 350 degrees F.

 

Cut each triangle of crescent roll dough into thirds lengthwise, making 3 small strips from each roll.

 

Brush the dough strips lightly with Dijon mustard. Put the mini hot dogs on 1 end of the dough and roll up.

 

Arrange them, seam side down, on a greased cookie sheet. Brush with

egg wash and sprinkle with poppy seeds or sesame seeds. Bake until golden brown, about 12 to 15 minutes. Serve warm with the dipping sauce.

 

Tangy Dipping Sauce:

  • 1/2 cup sour cream

  • 1/2 cup mayonnaise

  • 3 tablespoons Dijon mustard

  • 1 tablespoon whole-grain mustard

Mix all of the ingredients in a bowl. Cover with plastic wrap and refrigerate until serving. Can be made a day ahead.

MACHO NACHOS

This recipe was created by Paula Deen, and we think it is a perfect game food.  Mr. Spring really loves this one.

 

  • 1 can refried beans

  • 1 large bag white corn tortilla chips

  • 1 medium onion, chopped

  • 1 cup shredded pepper jack

  • 1 jalapeno, sliced crosswise, plus extra for garnish

  • 1 can chili, or your favorite chili recipe

  • 1 cup shredded Cheddar

  • 1 cup sour cream

  • 1 cup green onion, chopped

  • 1 tomato, diced

Directions

Have all the prepped ingredients easily accessible to assemble nachos.

Preheat the oven to 350 degrees F.

In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos. On a large ovenproof platter, spread out a layer of tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with some onions, jack cheese, and jalapeno slices. Spoon on chili and top that with Cheddar. Repeat this layering process until ingredients are used up. Save some of the jalapeno slices for garnish. Place platter in the oven and bake until cheese has melted, about 5 to 10 minutes. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeno slices and serve hot.

 

 

HotDogSauce3 - Four Super, Super Bowl Recipes

My grandmother owned a country restaurant for a while, and chili dogs were one of the most popular items on her menu.  You can make it in a slow cooker, which means it can be cooking while you are doing other things to prepare for the game.

 

GRANDMA’S HOT DOG SAUCE

 

3 pounds ground beef or ground turkey

5 1/4 cups ketchup

1/2 cup mustard

9 medium onions

1/2 cup chili powder

3/4 cup apple cider vinegar

3/4 cup sugar (more if sauce is too tart)

Brown meat and drain.  Chop onions.  Add both to a large pot along with the remaining ingredients, and simmer for 45 minutes.  Watch carefully and stir frequently so that it does not scorch.

If you don’t want to make such a huge quantity, you can divide the ingredients proportionally to make a smaller amount.

New York Sour

Now for that alcoholic beverage we were talking about.  This one is more of a girl drink, but it’s perfect for sipping while you wait for the commercials and the half-time show.  Let the men have the beer, and you stick to this beauty.  It has one step that requires a soft touch, but you can do it!

 

THE NEW YORK SOUR

 

2 ounces rye or bourbon (we used Kentucky bourbon)

1 ounce freshly squeezed lemon juice

1 ounce simple syrup (Make in advance using 1 cup water and 1 cup sugar and bring to a boil.  Then chill till needed.)
