After being away from home for a while, I love getting involved with some baking or cooking. Somehow, it helps me reconnect with my life. I mentioned in this post that Mike and I were inspecting the progress made on our remodeling project while we were away, and we happened to be there at 6:30 Sunday morning. After that and then breakfast, we headed to the grocery. I saw and bought rhubarb because we both grew up with it growing in our family gardens. The check-out girl didn’t even know what it was. We also bought some strawberries, and I knew that a strawberry rhubarb pie would be a nice sweet treat for us after two weeks of bicycling. I simply took a quick picture for Instagram as soon as it came out of the oven, and that’s the only photo I have to share with you today. Nevertheless, the pie was delicious (just ask my hips), and we paired it with whipped cream and enjoyed every single bite. If you are on the lookout for a nice summery dessert that has a little bit of a country vibe, bake this tasty pie ASAP. You will love it!
Strawberry Rhubarb Pie
Ingredients
- 1 cup white sugar
- 1/2 cup all-purpose flour
- 1 pound fresh rhubarb, chopped
- 2 pints fresh strawberries
- Pie crust (I use the Pillsbury brand, but you can make this using your favorite recipe)
Instructions
- Preheat oven to 400 degrees F.
- In a large bowl, mix flour and sugar. Add strawberries and chopped rhubarb. Toss with sugar and flour and let stand for 30 minutes.
- Pour filling into pie crust. Dot top with butter, and cover with top crust. Seal edges of top and bottom crust.
- Bake for 35 to 40 minutes or till crust is brown and filling is bubbly. Cool before eating.

We used whipped cream for a topping, but let’s face it, a scoop of vanilla ice cream would have been even better.
