Tis the season!!! No, not that season. It’s strawberry season in some parts of the country and will be full-blown strawberry season in the whole country in just a few weeks. I took advantage of some good-lookin’ strawberries being sold at our local grocery and made a delish pie. Well, actually it looks more like a tart because my crust shrank in the oven. It’s super easy, and you can actually make one in just a few minutes. The hard part is letting it chill for two hours before serving.
STRAWBERRY PIE

1 baked pie crust
3 pints (6 cups) fresh strawberries, washed, hulled and sliced
1/2 cup sugar
2 tablespoons cornstarch
1/2 cup water
1 teaspoon almond extract
4 to 6 drops red food color, if desired
Combine sugar and cornstarch in a sauce pan. Add water. Cook over a medium heat stirring constantly till it comes to a boil. Continue cooking for one more minutes. Remove from heat and add almond extract and food coloring. Let cool for 10 minutes.
In a large bowl, combine with the prepared strawberries and stir well. Put into the cooled pie crust and chill in the refrigerator 2 hours before serving.
Add a dollop of whipped cream or ice cream to the top and enjoy.
