Hello, Summer! I don’t know what it is about this summer, but I am so excited to be spending it with Little Miss and Yankee. Last summer there was so much focus on becoming a family of three and on attachment. This summer – let the fun begin. It all starts with lots of outdoor play and to cool off, we have been enjoying lots of healthy homemade popsicles.
I read about this book Glow Pops in People magazine and thought hmm….. I’ll give it a try. Well, I am so glad I did, and we are hooked. I have even purchased another popsicle mold to keep our freezer stocked with different flavors. These popsicles are made without refined sugars, and all the flavors we have tried are so tasty. Plus, it is a fun activity to do with Little Miss. We throw some things in the blender, blend, freeze, and a few hours later, we have tasty popsicles.
One of my favorites has been the golden milk popsicle. A few months ago Mom blogged about a golden milk drink we had been drinking at night. I really enjoyed the golden milk, but now that it is getting hotter, a cup of hot almond milk at night didn’t sound as appealing. Enter these popsicles which still have the great benefits of turmeric and ginger. Even Little Miss loves the flavors of this popsicle. We ate them before I got a picture. 🙁
Another flavor we recently tried was strawberry rosemary. The flavors of strawberry and rosemary were so tasty. Little Miss told me this one has been her favorite so far.
Here is blueberries and cream.
Chocolate fudge pop which hit the chocolate spot. Oh….it was so good. We just made some this morning with sweet potato and look forward to trying them later. I really don’t think I’ll be able to go back to a regular store bought popsicle. So, since I am currently obsessed with this book I wanted to share. I think I have told so many of our friends and family about it as well, and it seems they are loving it just as much as we are. Here’s the recipe for the strawberry rosemary popsicle.
Ingredients
- 3 cups hulled fresh strawberries
- 1/4 cup water
- 3 springs fresh rosemary
- 1/2 teaspoon pure vanilla extract
- 1/8 teaspoon salt
- 3 Tablespoons honey
Instructions
- In a small pot, combine strawberries, water and rosemary. Cook over low heat, mashing the strawberries with a wooden spoon, until the berries have collapsed and released their juices. (around 10 minutes)
- Turn off the heat, cover and let cool for 10 minutes
- Remove and discard the rosemary sprigs. Transfer the mixture to a blender and add the vanilla, salt and honey. Blend until well combined.
- Pour the mixture into the pop molds and freeze for 1 hour, then insert sticks and freeze for the last four hours. (with our pop molds I add the sticks right after adding the mixture to the molds)
We are headed to Lexington for a big ole family celebration of one of our favorite holidays. We are all racing in a 10k on Tuesday morning, going to a patriotic concert, parade, farmer’s market, aboretum, church, brunch out, and much more.
