Strawberries are a favorite fruit of mine. I buy them all year long at Kroger, but I find myself getting giddy when it is actually strawberry season and we can pick our own or buy freshly picked local berries. We think you will L.O.V.E. today’s recipe. It’s a low cal and low fat strawberry soup that is actually healthy. And the crazy thing is that this stuff tastes as if it holds at least half of your day’s calorie allotment. It is rich and creamy and delicious. Oh, and did we mention it is low cal and low fat??? Just like last week’s recipe, we shared this one with our readers way back when we first started blogging and had just a few followers. Now we want to make sure all ya’ll get a chance to see it/make it/eat it.
LOW CAL/LOW FAT STRAWBERRY SOUP
1 quart strawberries, chopped
2 cups milk (I used skim milk)
2 containers vanilla yogurt (I use low-fat with low-cal sweetener)
1 teaspoon vanilla
2 tablespoons honey (more if needed) or Splenda to taste
Blend in food processor till smooth.
More milk and/or yogurt can be used depending on how thick you want it to be. Also, I added two packets of artificial sweetener to enhance the flavor because I tend to like it sweet.
That’s it! It tastes really decadent and is good to serve for a dinner party or when you want to impress the boss or your kids.
