I don’t know about where you live, but February here in beautiful Lexington, KY can be cold and dreary. We thought you might enjoy cooking up some soothing winter soups this month to warm your bones, and so, we searched our archives and found some worth sharing again. Most of these soups are simple to make and can warm you up when you need it.
Carrot Soup
You probably have most of the ingredients needed for this awesome carrot soup already on hand. Make enough to have leftovers for work.
Tomato Bisque
It can be much simpler than a two-ingredient recipe. This tomato bisque is so good that I have served it to company, but shhhhh, I didn’t tell them how easy it is to make.
Salmon Chowder
This salmon chowder is a whole meal. You can add some corn muffins or garlic bread and that’s all. It is the best soup I have ever made.
Slow Cooker Jambalaya
The only way I can top the salmon chowder is to make it in a slow cooker, and that’s just what you do with this jambalaya. It is a meal in itself and a real show stopper. Just add garlic bread. It would be great to serve on Mardi Gras.
Vegetarian Chili
This vegetarian chili has all of the flavor of regular chili but without the meat. It’s great with a side salad and popovers.
