If you are in need of some meatless meals for Lenten Fridays, this post is for you.
Although we don’t have to, I prefer to go meatless on Fridays during lent. Now granted, I don’t eat red meat ever and just stick to chicken and fish on an ordinary basis. However, putting effort and thought into a meatless Friday seems right to me this year. I remember the days in college when we were served watery fish on Fridays, and I don’t ever want to do that again. I want to have an interesting and delicious meal that checks all of the boxes. We combed through our recipe archives and came up with some meatless meals for Lenten Fridays that you might like to try. If you follow us on our Instagram stories, then you saw that last Friday I made the salmon chowder for lunch and I made cheese stuffed manicotti for dinner that evening. Normally, I don’t cook two big meals in a single day, but I knew that we could have leftovers on Saturday, and that would make up for the hours in the ktichen Friday. And by the way, I forgot to take photos of the manicotti, so I will not be sharing that recipe with you. (#badblogger)
