Well, it’s back to reality again after a fun weekend camping in the Adirondacks. Today I made a “must-have” for your kitchen – especially if you enjoy cooking. My mom has shown you how to DIY your own vanilla extract. I have some in my cabinet which will be ready any day now! I just learned you can also make your own lemon extract. Anything lemon tastes especially good in the summer, and this easy extract will enhance the flavors even more.
You only need a of couple ingredients for this extract: 1. vodka (I used the cheap stuff I had left over from making my vanilla) 2. a large lemon, 3. a grater, and 4. a jar. That’s it!!
I am showing two lemons here, but I ended up just using one since they were pretty large.
This is all you need to do: Wash and clean the outside of your lemon and start grating. Try not to get much of the white part because it tastes bitter.
It smelled so good. After grating the lemon, I was in the mood for lemonade and lemon bars, but I settled for strawberries because that what was on hand.
Pour about a cup of vodka into a jar and add the lemon peels. Screw the lid on tight and give it a shake. Store in a cool dark place for at least two weeks. Shake the jar at least once a week. Then after the two-week period is up, strain the lemon peel and transfer it to a brown bottle. The brown will help prevent evaporation. Voila- DIY Lemon Extract.
