I think everyone out there loves a good ole chocolate brownie. A few years back we ran this recipe for orange brownies,and you all really enjoyed it. When I am invited to a pot-luck, I usually sign up to bring a dessert knowing that everyone will love those orange brownies. We decided a tweak of that great recipe would be easy to achieve, and so, we came up with a glazed lemon brownie recipe. It is every bit as good as the orange version. Plus, it is easy to make. Be sure to pin this one because it will be perfect for tailgating which starts in just a few weeks.
GLAZED LEMON BROWNIES
1 1/2 cups all-purpose flour
2 cups sugar
1 teaspoon salt
4 eggs
2 sticks butter, softened
1 teaspoon lemon zest
1 teaspoon lemon extract
Combine flour, sugar, and salt. Add softened butter, eggs, zest, and lemon extract. Beat with a handheld mixer till well-combined. Bake in a greased or sprayed 9 x 13 inch pan at 350 for 30 minutes. As soon as it comes out of the oven, poke holes in the top with a wooden skewer or toothpick. Spread the glaze over the warm brownies.
LEMON GLAZE
1 cup powdered sugar
2 tablespoons lemon juice
1 teaspoon lemon zest
Mix and spread over warm brownies.
Sadly, we have to say farewell to Lake Placid, NY today. It has been an amazing vacation week, and we both highly recommend it as a destination for any of you. If you have children, they would love it, too. There are so many things to do here, both indoors and outdoors. We have been busy practically every minute and enjoyed a boat-load of activities we have never done before.
