I failed at biscuit making until just a few years ago. That’s when I came across a recipe that I consider the best biscuit recipe out there. I shared it with you here. Then I doctored up that recipe for fall/winter, and shared this recipe with you which has been REALLY popular. Since we are now in the spring/summer months, I decided to tweak my basic biscuit recipe once again and came up with the best ever lemon biscuits recipe. Sadly, I don’t know the source of the original biscuit recipe that I use. I just have it written down on a piece of paper meaning I either found it in someone else’s magazine or a family member gave it to me.
BEST EVER LEMON BISCUITS
2 cups all purpose flour
4 teaspoons baking powder (If you want to make your own baking powder, here’s how.)
3 teaspoons sugar
1/2 teaspoon salt
1/2 cup crisco
2/3 cup milk
1 egg
1 teaspoon grated fresh lemon peel
1/2 teaspoon lemon extract
Preheat the oven to 450 degrees. Sift or whisk the first five ingredients together. Cut in the crisco. Mix the milk, egg, grated lemon peel, and lemon extract together together and add to the dry ingredients. Stir gently till all ingredients are well-combined, and then knead on a lightly floured surface 20 times. Roll out to about 3/4 inch thickness and cut with a biscuit cutter. Place on an ungreased baking sheet (I use a Silpat on mine) and bake 10 to 12 minutes. Remove from oven and top with a lemon glaze made from 1 cup powdered sugar, 1 teaspoon grated lemon peel, and 4 teaspoons milk. Add more liquid if you want the glaze to be thinner.
Both Mr. Right and I are crazy about these biscuits. We even topped them with this. I love to cook brunch for us after mass on Sundays, and a biscuit in some form usually is part of our meal. These biscuits freeze very nicely, and I just pop a frozen one in the microwave when I want a yummy and warm biscuit on a busy morning.

Your biscuit recipes look delicious. I noticed that the original recipe calls for 4 teaspoons baking powder while the two variations call for just 2 teaspoons. Is that correct? I can’t wait to try them! Thanks!
