When Jordan and Google were here, I wanted to make a dessert/snack food that was easy, didn’t take long to assemble, baked quickly, and had peanut butter in it. Google loves peanut butter. I have a delicious peanut butter cookie recipe, but I wanted to make some type of bar cookie because it bakes more quickly. I searched on Allrecipes.com and found a recipe for peanut butter bars. They were really good, and my little grandson liked them with some milk for his after-nap snack. I intended to spread chocolate icing on the top to make them even better, but I just didn’t get around to it. I did add nuts and coconut to the batter, though as an enhancement. I also took a bunch of them to the tailgating party we went to. If you love peanut butter, then you will enjoy this recipe.
Ingredients
- 1 cup peanut butter
- 6 tablespoons butter
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup all-purpose flour
- 2 cups chocolate chips
Instructions
- Mix peanut butter, butter or margarine, and sugars until creamy. Stir in vanilla. Beat in eggs. Mix in flour. Stir in 3/4c chocolate chips. Spread dough into a greased 9 x 13 inch pan.
- Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Remove pan from oven, and sprinkle with the rest of the chocolate chips. Let stand 5 minutes and spread. Cool, and cut into bars.
I did not have chocolate chips in the house when I made these peanut butter bars. That’s why I was going to make the chocolate icing and why I added the nuts instead.
I think these bars would even be good with jam spread on the top. My mother used to make peanut butter and jelly bars, so adding jam would resemble them.
This recipe would be great as dessert, after school snack, or a tea time treat. Enjoy.

Sounds great & I will try it. Used to teach pre-school at 2nd Pres & we would walk to the park & go by your house. One reason why I enjoy your blog. Here’s a great PB cookie recipe for you. 1cup peanut butter(creamy), 1cup sugar, 1egg. Bake at 350 about 12 minutes. Roll into small golf ball size & flatten with a fork. It’s a nice dough so little ones can roll the balls & it’s not sticky. Enjoy!!
