I recently needed to take something to a pot luck lunch that was also a meeting, and I knew right away that these peanut butter chip cookies would be a hit. The chip happens to be a dark chocolate chip which means the cookies have a Reese’s cup vibe going on. Now, raise your hands if you like Reese’s candy bars and Reese’s pieces. That’s right. Everyone’s hand went up. That’s why I knew these cookies would be a hit, and by the way……they were. You know that I like things that will freeze, and these cookies freeze very well. I doubled the batch and froze half of them for Mr. Right. He sneaks into the freezer every afternoon and grabs one or two for his snack. The boy eats them frozen which drives me loco. I keep telling him that a few seconds in the microwave would enhance the flavor, but he thinks that’s too much like cooking. Silly boy.
Bake some cookies today.
Ingredients

- 1/2 cup shortening (half butter)
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 1/4 cup all purpose flour
- 1/2 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 10 ounce package dark chocolate chunks
Instructions
- Preheat oven to 375 degrees.
- Mix first five ingredients till well blended.
- Sift together flour, baking powder, baking soda, and salt and stir into shortening mixture.
- Fold in chocolate chunks.
- Drop by spoons full (about the size of a walnut) onto a lightly greased baking sheet.
- Bake 10 - 12 minutes.
These cookies served as the finale for an afternoon tea or a simple lunch are perfect. They also are great served as an after school snack, tucked into a lunch box for dessert, a mid-morning pick-me-up, or even as a bed time snack. The combo of peanut butter and the rich, dark chocolate will put a smile on your and everyone else’s faces. Do yourself a favor, and make some soon.
