I came up with a great grab and go breakfast cookie recipe that will help with your rush out the door on those busy mornings. These cookies are more nutritious than a donut, muffin, or cinnamon roll, and I think they are a lot tastier than a granola bar. Plus, there are two options for the topping. The recipe makes around five dozen, and they can be stored in the freezer till needed. Then all you do is toss one or two in the microwave for 11 to 15 seconds, and you have a breakfast that’s ready to go. Grab your keys, coffee, paper, and bag, and you get out the door faster.
GRAB AND GO BREAKFAST COOKIE
1 cup margarine or butter, softened
1 cup granulated sugar
1 cup brown sugar, firmly packed
1 tsp. vanilla extract (I use this one)
2 cups all-purpose flour
1 1/2 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
3 cups uncooked oats
1 cup chopped nuts (optional)
1 cup dried cranberries or dried blueberries
8 slices very crispy bacon, broken into small pieces
Coffee glaze (recipe below) or jam (I used this one)
Preheat oven to 375 degrees.
Cream butter or margarine and sugars till smooth. Beat in eggs and vanilla.
Sift together flour, cinnamon, baking soda and salt. Beat into cream mixture.
Stir in oats, nuts, bacon, and dried fruit. Mixture will be stiff.
Drop by rounded teaspoonfuls onto greased baking sheet. Bake 10 to 12 minutes.
As soon as the cookies come out of the oven, make a small dent in the center of each cookie and add a dollop of jam.
Option 2 (This option is my favorite.)
Combine 1 cup of confectioner sugar and 1/2 teaspoon instant coffee. Gradually add 1 to 2 teaspoons of milk until you get a nice consistency that you can drizzle over the cookies.
Keep cookies either in the fridge or freezer.
