We still have enough picnic weather remaining this summer that you can go on a spur of the moment outing. Pack a lunch, and make this delicious and fun key lime pie in a jar to add to it. It only takes about 10 minutes, and is so easy that even the kids can make it. And if there is someone in your family who packs a lunch for work or school every day, what a fun dessert treat to add to the mix! I love making desserts that can be served in jars. It’s just a special way to have an already awesome treat. Every person has his or her own little lidded container with something grand inside.
Ingredients
- 6 clean 4-ounce mason jars with lids
- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter melted
- 3 tablespoons sugar
- 2 (14 ounce) can sweetened condensed milk
- 1 cup key lime juice (you can use juice from regular limes)
- Freshly whipped cream or Cool Whip
Instructions
- in a bowl, combine crushed graham crackers, butter, and sugar.
- Add 1 heaping tablespoon to the bottom of each jar.
- Mix together the lime juice and sweetened condensed milk.
- Add about two tablespoons to each jar.
- Add another layer of graham crackers.
- Add more lime mixture.
- Top with whipped cream and seal with lid.

My box of jars seemed to have disappeared in our move last year, so I bought a box of 12 jars here. I will just keep them stored in our basement and use them as needed.
You can vary the amount of cracker mixture and pudding mixture you add to each jar, but I ended up having two layers of crackers and two layers of pudding. I thought the jar was prettier that way. Also, I made the whipped topping from scratch. I like to keep a container of whipping cream in the fridge. You never know when a recipe will call for it.
One more thing. I don’t know why people call this key lime pie when really, most people make a key lime pie with regular limes. Key limes are tiny, and much harder to work with. Do you use key limes or regular limes when you make a lime pie? I’m just curious about that.
