If you have been reading our blog for a while, then you know we love breakfast around here. We have shared recipes for breakfast cookies, biscuits (here and here), pancakes, and more. Well, today we are sharing another one thanks to Yankee. For the first month that we lived in Charlotte, we stayed in corporate housing in a plush apartment uptown. It was so convenient for us because while Yankee was at work, I spent the day at our new place cleaning and painting before the furniture arrived. Before we left the apartment each morning, we prepared a nice breakfast before stopping by the coffee shop on the eighth floor where a barrista made a cup of coffee for each of us. To add some variety to our breakfasts, Yankee bought a breakfast sandwich maker. He used it to make his own egg mcmuffin knockoffs. Just like the one you can buy from the golden arches, his sandwiches use English muffins, eggs, and cheese. Instead of Canadian bacon, he used a brand of meatless sausage that tasted just like the real thing but without the grease and extra calories. You can get the breakfast sandwich maker here.
Since Mom has been here this week helping us make our house a home, we have been making the sandwiches for our breakfast. We thought it would be a great recipe to share with you today. By the way, this is not a sponsored post. We just really like the product and think you might, too.
This is how we did it:
EGG MCMUFFIN HACK
English muffins (white or whole wheat)
Cheese (we used colby but any hard cheese would work)
Eggs
Canadian bacon, bacon, sausage, or soy sausage (optional)
Tomatoes or avocados
We even have action shots! First, you heat the sandwich maker until the green light comes on, and then place the muffin, egg, cheese, and any other items on the different layers on the machine. Close the cover, and let it cook for about four minutes.
Then slide out the cooking plate by rotating the handle clockwise. Lift the cover and rings; carefully remove sandwich with plastic spatula. According to the website, you can use biscuits, bagels, or croissants as well as goat cheese, veggies, and more.
