I received a book to review a while back but with work travels and other adventures, I am just now getting around to making a couple of its recipes. The book is Start Fresh by Tyler Florence.
We do not have any children at this point, but if I did, I think this book would be a must. It had a lot of healthy recipes for children. Actually, it has recipes for all ages even though the cover and title emphasize the little ones. Today I am going to share the recipe for a breakfast meal with you. I think your children will like it, and I know you will. It’s like banana French toast.
BANANA BREAKFAST SANDWICHES
Makes 2 Adult Servings or 4 Kid Servings
2 bananas, halved crosswise and then halved lengthwise
4 slices whole wheat or multigrain bread
2 eggs
1/2 cup whole milk (I used skim)
1/2 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
pinch of salt
1 tablespoon unsalted butter
2 tablespoons honey
1 teaspoon confectioners’ sugar
– Arrange the banana slices in a single layer on 2 of the bread slices. Top with the remaining bread slices.
– In a large bowl, combine the eggs, milk, vanilla, cinnamon, and salt to whisk to blend. Soak each sandwich in the egg mixture for a minute or two or until the bread is just saturated.
– Melt the butter in a large skillet over medium heat. Place the sandwiches in the pan and cook until the bottoms are golden, 2 to 3 minutes. Flip the sandwiches, place a heavy pan on top of the sandwiches to press them and cook until crisp and golden, 2 to 3 minutes.
– Cut each sandwich into quarters and serve warm with a drizzle of honey and shake of confectioners’ sugar.

Tyler Florence is the best. I like most anything he does. I particularly liked a tv series he did some years ago called Tyler’s Ultimate where he travels across the U.S. and Europe trying out their best recipes and then bringing them back home. He went to Verona for Risotto, Naples fr Pizza, France for Tarte Tatin. Molto delisioso

I love this idea for the toilet! We have four children and I think this will really be a water saver 🙂
