We are really excited about today’s post. With St. Patrick’s Day right around the corner, we started thinking about some easy recipes you could prepare and serve along with your corned beef on the special day. We wanted some dishes that are green but are not cabbage. We looked through our archives and found seven easy St. Patrick’s Day recipes consisting of green appetizers, salads and even a beverage that can spiff up your meal. And as a bonus, we threw in our recipe choice for Irish soda bread.
Let’s start things out on St. Patrick’s Day with this alcoholic beverage. After all, you don’t have to drink green beer if you don’t want to.
Not only would this guacamole be a great appetizer before your St. Patty’s meal, but it would also be fun to serve while watching March Madness madness on the tube.
This benedictine dip is nice and green and another great appetizer. I think that appetizers often work well as sides if you are serving a stew or soup or corned beef.
This strawberry and almond salad is loaded with greens and goodness.
I am crazy about this delicious, nutritious, and beautiful brussel sprouts dish.
Zucchini is my favorite vegetable, and surprisingly, these fritters are easy to make and are really good.
As promised, here’s a perfect recipe for the obligatory Irish soda bread.
Take care.
