Mom and I put our heads together and decided to revisit some of our recipes that have a touch of red in them (or are all red) for you in honor of July 4 next week. These recipes would be good for a party or just two people, are perfect for summer, and just happen to have a little or a lot of red. Tomato season is already here in most of the country, but if you can’t get them yet, that’s okay. This cold soup can be made with either fresh or canned tomatoes. Go here for the recipe.

FRUIT SALSA

Fruit Salsa
Although this different version of salsa isn’t all red, you can go heavy on the strawberries and raspberries. Toss in some blueberries, and it will be even more festive. Go here.

Again, this isn’t completely red, but you can omit the peas and add some blueberries and feta cheese to and call it a “Red, White, and Blue” salad. Go here.

Here’s a “behind-the-scenes, let’s keep it real” story about this recipe. It’s really a great recipe, but when my mom tried to take photos of it, the pie completely fell apart. She took tons of photos and was able to use just one in the blog, and it wasn’t that great. That’s why she covered it up with the BIG BLACK LETTERS. Hopefully, yours will stay together. Top it with some whipped cream and a teeny little flag and call it a day. Here is the recipe.
