I’ve been on a muffin kick lately. Thank goodness it is more muffin baking than muffin eating. So, when I had a meeting at my house on a recent morning, I thought it was time to make some more muffins. This time I went for applesauce muffins since I had just made some fresh applesauce the night before.
I made little bite-size muffins that are just the cutest things. And the best part is that they are dipped in a mixture of cinnamon and sugar while still warm. Yum….The recipe is really simple (it’s from Taste of Home), and don’t worry…..you don have to make your own applesauce.
MINI-APPLESAUCE MUFFINS

1 cup butter, softened

2 cups sugar

2 eggs
-
1 teaspoon vanilla extract

2 cups applesauce
-
4 cups all-purpose flour

1 teaspoon baking soda
-
1 teaspoon ground cinnamon
-
1 teaspoon ground allspice
-
1/4 teaspoon ground cloves
-
1/2 cup sugar
2 tablespoons cinnamon -
Melted butter
Directions

In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Stir in applesauce. Combine the flour, baking soda and spices; stir into creamed mixture. Fold in nuts.

Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans. Dip the top in melted butter and then into a mixture of cinnamon and sugar. Cool on a wire rack.
