I had some old bananas on hand a couple of weeks ago, and I decided it was time to make some banana bread. As I was doing some Pinterest searching for a recipe, I came across a recipe without flour or sugar. I have always wondered about these recipes so I thought I would give it a try. Plus, I had everything on hand so it was a no brainer. I have to say that I enjoyed these muffins.
Oats were used instead of flour in this recipe. I used my food processor and ground the oats and the other ingredients.
Here you can see ground oats.
I added the rest of the ingredients and did another quick mix.
NO FlOUR or SUGAR BANANA MUFFINS
2.5 cups old fashioned oats
1 cup plain low fat greek yogurt
2 eggs
1/2 cup honey
2 tsp baking powder
1 tsp baking soda
1 tsp vanilla
2 ripe bananas
Preheat over to 400 degrees. Spray muffin tin with non stick cooking spray or us muffin tin liners.
Place the oats in the food processor and pulse for about 10 seconds. Add the remaining ingredients to the food processor.
Process until everything is smooth.
Divide the batter into the cupcake tins.
Bake 18-20 minutes.
