I used to make these bite size applesauce muffins all of the time, and then I lost the recipe. I knew that they came from one of Southern Living’s annual cookbooks, but I couldn’t remember which one. When I was visiting my parents last week, I saw that my mother still has every. single. one. of her SL annual cookbooks. So, I started going through them until I found the recipe. It was in the 1982 edition. These tiny muffins are really easy to make and can satisfy a sweet tooth in no time. Plus, they’re good as a dessert, a snack, as a breakfast side, or after school treat. This one recipe makes about 48 muffins, so they go a long way.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup sugar
- 2 eggs
- 3/4 cup applesauce
- 1 3/4 cup flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- 1/4 cup sugar
- 1/8 teaspoon cinnamon
Instructions
- Preheat oven to 425 degrees.
- Cream butter and sugar till fluffy.
- Add eggs, one at a time.
- Stir in applesauce
- Combine dry ingredients and add to creamed mixture.
- Stir just till moistened.
- Spoon batter into lightly greased mini muffin tins, 2/3 full.
- Bake 13 to 15 minutes. Remove from pan immediately.
- Dip into melted butter.
- Combine sugar and cinnamon and sprinkle over each muffin.
I use these mini muffin tins for baking these muffins. The tins are also good for mini tarts.
