Chicken and rice pilaf is a comfort food that can be made using ingredients that are probably in your pantry.
As promised last week, we are sharing recipes these days that can be made using ingredients that you probably have in your fridge, freezer, and/or pantry. Truthfully, I have not made a recipe using a can of mushroom soup in years. However, as a newlywed learning to cook, I often made chicken and rice pilaf. It was an easy recipe for a new cook to navigate, and of course, it had the required can of soup. No matter, it is a really good recipe. This recipe calls for a packet of onion soup, but I did not have it. So, I sprinkled in some dried onion flakes and added salt and pepper instead. Also, since there are just two of us here, I divided this into two 8-inch pans and froze one.
I made out a menu of everything that I can make using the items we have here, and it’s a pretty good list. You can find it here. We have been keeping fresh fruits and veggies on hand as much as possible, but it’s nice to have the reserve when we need it. If you have been here for a while, then you know that I like to make everything from scratch – or at least as close to scratch as possible. So, I am having a grand time in the kitchen during these days of isolation.
Chicken and Rice Pilaf
Ingredients
- 1 1/2 pound boneless chicken breasts cut into large pieces (about 2 inches)
- 1 can mushroom soup
- 1 1/4 cup chicken broth
- 1/4 cup white wine or sherry
- 1 packet onion soup mix
- 1 cup uncooked rice
- 1/4 cup chopped almonds or pecans
- 2 tablespoons Parmesan cheese
Instructions
- Grease a 9 x 13 pan and preheat oven to 375 degrees.
- In a large bowl combine all ingredients except nuts and cheese.
- Put in pan and cover tightly with foil. Bake for 30 minutes.
- Remove from oven and stir.
- Bake an additional 20 minutes covered in foil.
- Remove foil and top with nuts and cheese. Bake 5 minutes longer.
