Mini Cherry Pies

I wanted to make something special for Valentine’s Day to share with you here, and I found these adorable little pies on Pillsbury’s website.  They call them cherry pie cookies, but these are truly mini cherry pies in my book.  They became Valentine mini cherry pies when I used a small heart-shaped cookie cutter to cut out a shape on the tops.  You know that I like to make everything from scratch, but I took the easy way for this festive dessert.  I bought unbaked pie crusts (the kind that come in a long, rectangular box,) and I bought cherry pie filling.  Also, I used some decorator sugar that came from Paris, but the recipe calls for just granulated sugar.  You have plenty of time to buy your crusts and filling before the big day so you can make these mini cherry pies, too.

These mini cherry pies were so easy to make, and it was a fun process.  I made them when our house was overrun with workers making repairs and doing some electrical work, and being in the kitchen helped me remove myself mentally from the chaos.

Valentine Mini Cherry Pies

Ingredients

  • 1 box refrigerated pie crust, softened as directed on box
  • 1 cup more fruit cherry pie filling (from 21-oz can)
  • 1 egg, beaten
  • 2 teaspoons sugar

Instructions

  1. Heat oven to 375°F. Line large cookie sheets with cooking parchment paper.
  2. Unroll 1 pie crust on lightly floured work surface. Using rolling pin, roll pie crust into 12-inch round. Using 3-inch round cookie cutter, cut out 16 rounds from pie crust, rerolling scraps as needed. Repeat rolling and cutting with second pie crust.
  3. Place 8 rounds on each cookie sheet. Spread 1 tablespoon pie filling in center of each round, leaving an edge. Brush edge of rounds with beaten egg. Using small (1 to 1 1/2-inch) cookie cutter of your choice, cut out center in each of the remaining 16 rounds. Top each bottom with cut out dough round, pressing down on outer edges with fork to seal.
  4. Brush tops of dough rounds with egg; sprinkle sugar on tops.
  5. Bake 17 to 19 minutes or until golden brown on top and edges. Remove to cooling rack and cool completely, about 30 minutes.

Now, granted my pies do not look like the professionally created ones on Pillsbury’s website.  They look homemade and a little bit rustic.  They are really good, and I bet would be even better with a big scoop of ice cream resting on top – especially if they are warm.
