Homemade Granola

By Janette | Food

Author – Autumn (Janette)

When we weren’t looking, summer started to wind down, and the kids are off to school.  I thought it would be nice to share a granola recipe that I love making, and Mr. Autumn enjoys eating.  It is a hardy recipe that will keep little and adult tummies full till lunch.  You can vary it by using your choice of dried fruits to add and switch things up.

wses145331 - Homemade Granola

GRANOLA

5 cups uncooked oatmeal

1 12-ounce package coconut

1 cup chopped almonds

1 teaspoon cinnamon (I add more)

1/4 cup cranola oil (Some recipes call for a lot more oil, but I prefer the low fat version)

1/2 – 3/4 cup honey

1 cup dried, chopped fruit like pineapple, cranberries, apricots, raisins

Heat oven to 300 degrees.  Mix oatmeal, coconut and almonds together in a big bowl.  Combine oil and honey and whisk.  Add it to the oat mixture and mix very well.

You can either add your fruit now or after it has been baked.  (I add my after).

Spread the mixture evenly on a large baking sheet or jelly roll pan.  Bake for 15 minutes and then stir.  Bake for 15 minutes more.  BE CAREFUL.  It will burn easily.

This recipe is great in a bowl with milk or mixed with yogurt or ice cream.

Enjoy and have a good week-end.

Take care.

I use dried cherries and dried apricots, figs and chopped dates & add it to my yogurt and fresh fruit — I use about 2 T for crunch — thanks for a good low sugar recipe

That looks great. Do share the skirt on the sink too. I am thinking of adding a skirt to the pedestal sink in the powder room.
