With more playoff games this weekend, the Super Bowl right around the corner, and basketball going strong, we thought you might like a recipe that would be perfect for game day. I saw fiesta flat taco bowls at Kroger when I was shopping a few weeks ago and decided they would be a nice alternative to the traditional tacos that we all love. And then to top it off, one of my Christmas gifts was this cookbook, Skinny Taste One and Done. You can find it here. It is full of healthy meals that can be made in either a slow cooker, an air fryer, or an insta pot. However, it does give alternative suggestions if you don’t have these cooking tools. Anyway, the book has a slow cooker recipe for taco filling that is just delicious and so darned easy. I first ate it when my daughter-in-law made it, and then I made it for Mike, Little Miss, and me after we spent a day at the ski slopes. It was so nice knowing there was a hot meal waiting for us when we got home.
Ingredients
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1 pound 93% lean ground turkey
- 1 15-ounce can black beans, rinsed and drained
- 1 1/2 cups jarred mild chunky salsa
- Fiesta Flats taco bowls
- Toppings like chopped lettuce, onions, tomatoes, and black olives and shredded cheddar cheese
Instructions
- In a small bowl, combine the cumin, chili powder, paprika, oregano, and salt.
- Place the ground turkey in the slow cooker, breaking it up loosely with your hands. Add the beans, top with the spice mixture, and pour the salsa over everything.
- Cover and cook on low for 8 hours, until the meat is tender. Break up the ground turkey and stir until everything is well combined.
- Follow the directions on the box for warming the bowls.
- Assemble each taco by placing 1/4 cup of the filling into each bowl and add desired toppings.
