That might seem like a strange headline for a recipe post, but I really didn’t know what to call it. So, A Salad Bowl Meal is what it is. You all know that Jordan is on her second round of A Faster Way to Fat Loss and is loving it. Get the details on that here. Well, I follow a blogger on Instagram who is also on the program, and she was doing lots of stories about the healthy meals she was making for herself. After cooking up some nutritious foods, she just put them into a bowl and savored every bite. So, I am sharing this idea with you, but I got it from Seersucker and Saddles.
I used to have cottage cheese and fruit for lunch, but now I am eating a bowl of healthy foods with a lettuce or spinach base. I guess in reality it is a salad, but it isn’t tossed. Each food has a place on top of the greens. The nice thing is that at least I know i am getting my five servings of fruits and veggies in one meal. It sort of takes the pressure off for the rest of the day. This is how it works:
How to Make a Salad Bowl Meal
First, I put one or two hands full of a lettuce mix or spinach in the bottom of a big salad bowl. Then I add a variety of foods to each corner. I always have a pile of black beans or garbanzo beans in a corner. In another corner I will add hard boiled eggs, chicken that I have baked and cubed, taco filling, tuna or tuna salad, chicken salad, or baked salmon. In another corner I will have fresh fruit like sliced strawberries, apple, blueberries, or a peach. Another corner will have diced fresh veggies, leftover roasted veggies, or avocado. Then on the top I sprinkle either feta cheese or shaved Parmesan cheese and then drizzle some salad dressing over everything. The best salad dressing that I have found for this is the siracha dressing at Trader Joe’s, but any of your favorites will work.
The great thing about this bowl meal is that you can use whatever you have on hand.

Pineapple
Cut up steak
Pepperoni
Turkey
Raisins
Baked sweet potato
Onions
Corn
Bell Peppers
Carrots
Broccoli
Cauliflower
Cucumbers
You get the idea. You can see from the picture that it is a colorful, good-looking meal. And you know that they say you eat with your eyes first. Another thing that is good about this meal is that it keeps me filled up, and it is satisfying.

Bowl meals are my husband’s most requested meal. Old Fiestaware bowls with a lip keep everything inside the bowls, nice & tidy. Thanks for the additional food ideas.
