Greetings, everyone. We have the perfect winter dessert for you today. I made it over the holidays, and it was so refreshing and comforting. It is orange pudding that I made using an old fashioned vanilla pudding recipe but enhanced it with the addition of grated orange rind, orange liqueur, and orange extract. It actually tastes like a creamsicle, and it is a dessert that would be appreciated by children and adults. Although I didn’t use any, a dollop of whipped cream on the top would make a nice little addition. This cooks up in just a few minutes and can be eaten either warm or cold. We had some for an evening dessert and then had more the following day at lunch. Enjoy this orange pudding recipe.
Ingredients
- 3/4 cup sugar
- 1/3 cup flour
- 1/4 teaspoon salt
- 1 tablespoon orange liqueur (optional)
- 1 teaspoon grated fresh orange rind
- 2 cups milk
- 3 slightly beaten egg yolks
- 2 tablespoons butter
- 1 teaspoon orange extract
Instructions
- Mix first five ingredients in a sauce pan. Gradually stir in two cups milk. Bring to a boil while stirring constantly over medium heat. Remove from heat and stir a small amount of hot mixture into the egg yolks. Add the egg yolk mixture to the pan and mmediately return to heat and bring to a boil again. Remove from heat and stir in butter and orange extract. Can be served warm or cold, but if serving cold, put a piece of wax paper over the pudding to prevent a film from forming.
Little Miss is spending a week or so with us while her parents are on an exotic babymoon. We have a whole list of activities planned, and cooking and baking together is on that list. I’m sure we will come up with some foods that we can share with you later.
