You can’t ever go wrong with blueberry muffins. They’re great for breakfast, as a snack, as a dessert when served with ice cream, and as a hostess gift or housewarming gift. Blueberries are almost always available at the grocery these days, and blueberry muffins with streusel topping are a great way to use them. I whipped these treats up last week and delivered some to two sets of neighbors. Sharing gifts from your kitchen is always appreciated by the recipients.
Blueberry Muffins with Streusel Topping
Ingredients

- Makes 6 large muffins
- 1 1/2 cup flour
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 egg
- 1/3 cup oil
- 1/3 cup milk
- 1 cup blueberries
- FOR TOPPING
- 5 tablespoons sugar
- 1/2 teaspoons cinnamon
- 5 tablespoons flour
- 2 tablespoons butter
Instructions
- Preheat oven to 400 degrees. Mix together flour, salt, sugar, and baking powder in a mixing bowl. In a smaller bowl, combine egg, milk and oil. Stir wet ingredients into dry ingredients and then fold in blueberries. Batter will be stiff. Combine 5 tablespoons sugar, cinnamon, and 5 tablespoons flour. Cut in butter. Sprinkle on top of muffins. Bake for 20 - 25 minutes. Cool before eating.
