Hmmmm, a paleo kale smoothie. Ok, I know the sound of this does not really make your mouth water, but believe me, it is delicious.
While we are still doing our square foot gardening this year, we also decided to get a CSA (Community Supported Agriculture) box. For those of you who don’t know how that works, we pay a fee to an organic farmer in the spring and receive a box of fresh produce weekly. The CSA goes till November, and we have really enjoyed all the fresh, organic vegetables. It really does force us to try new things. We have been getting a lot of kale. I knew people made smoothies with kale so I thought I would give it a chance.
During the summer I love fruit smoothies, but now with the CSA, I have been playing around with the veggies. I have found a smoothie that is tasty and healthy.
This is just a base recipe, and you can add to it as you like.
Green Smoothie
1 cup of coconut milk, almond milk or regular milk. (I love coconut milk so that is my choice)
2 cups of kale or swiss chard (I started with a cup to get used to have veggies in my fruit smoothies.)
1-2 carrots
1/2 to 1 cup of blueberries
5 big strawberries
1 frozen banana (break it into pieces before freezing)
1 tablespoon of peanut butter for protein and an extra kick.
Add all ingredients and blend. You do not need a fancy blender. We have a basic model, and it works fine. If you want a thicker smoothie, you can add ice but the frozen banana helps with consistency, I think.
Sit back and enjoy. Plus, think of all the fruits and veggies you have already gotten, and your day is off to a great start.

We have “green drinks” almost every day – even my husband who is a very picky eater will drink them – I use mostly fruit on hand – kiwi, pears & pineapple & cantaloup. When I add strawberries, black or blueberries the drink turns out looking like mud. Isn’t it interesting how the color changes when adding the dark fruits?
