If you are expecting a crowd of over-nighters this holiday week-end like we are, then you will need to be prepared with lots of food on hand. I made this dessert for my husband to take to a picnic last week for our bicycle club, and he came home with an empty plate. Either they were a hit, or he loaded up on the leftovers during his drive home. This will be an easy way to prepare a treat to eat as a dessert or to have on-hand for snacks. Either way, this recipe will be a hit.
OATMEAL BARS
1 cup butter
1/2 cup brown sugar, packed
1/2 cup granulated sugar
2 egg yolks
1 cup all-purpose flour
1 cup rolled oats
6 ounces semi-sweet chocolate chips
2 tablespoons butter
1/2 cup chopped nuts (I used coconut instead).
Heat oven to 350 degrees. Mix 1 cup butter, sugars, and egg yolks. Measure flour and add to mix along with oats. Spread in greased and floured 13 x 9 inch pan. Bake 20 minutes. Cool 10 minutes.
Melt chocolate and butter over hot water. Spread over cooled bars. Sprinkle nuts (or coconut) on top. Cut into bars.
