Homemade tomato soup that is hearty and easy is today’s recipe.
I grew up on Campbell’s tomato soup. That with a grilled cheese sandwich made the best lunch and still does. However, I now make my own tomato soup, and it takes just a few minutes longer than warming up a can of Campbell’s. We featured this two ingredient tomato bisque here on the blog and few years ago, and I do still love it. The tartness from the buttermilk, and the simplicity of making it helps it taste so much better. However, this homemade tomato soup that we are featuring here today is a perfect way to warm up on a cold winter day. I fixed it for Mike and me this past Monday when the temperatures were hovering in the teens, and it hit the spot. One of the good things about this soup is that you probably have all of the ingredients in your pantry. It takes stewed tomatoes, onions, chicken broth, and a little bit of milk. The addition of some seasonings is helpful. And the leftovers are even better. The flavors have had time to marry and and become enhanced.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 15-ounce cans stewed tomatoes
- 1 small can tomato sauce
- 1 small can tomato paste
- 1 quart chicken stock
- salt and pepper to taste
- 1/2 teaspoon dried basil (optional)
- celery salt to taste (optional)
- feta cheese (optional)
Instructions
- Heat olive oil in a Dutch oven or similar pot. Saute onion till tender and then add garlic.
- Add diced tomatoes, tomato sauce, tomato paste, chicken stock and seasonings.
- Simmer 15 minutes.
- Use either an immersion blender or put soup in a blender and blend until consistency is smooth.
- For added flavor, top with feta cheese, shredded cheddar cheese, or a spoon full of pesto.

Although a blender will work, I prefer to use this immersion blender when making soups and sauces. It is easier to blend in the pot rather than transferring the hot liquid into another container. We ate this soup with crackers, but by all means, feel free to make a delicious grilled cheese sandwich to accompany it. Enjoy this homemade tomato soup, everyone.
