After being away from my kitchen for three weeks, I was just itching to do some cooking when we returned home from our vacation last weekend. I specifically wanted to make (and eat) some fall soup. Yes, chili would have been an easy go-to (and I plan to make some of it this afternoon), but I wanted a nutritious, colorful, and easy squash soup. I added the ingredients for butternut squash soup to my shopping cart and made some for lunch on our first day home. Friends, this butternut squash soup recipe is so very easy, and it just makes me feel healthier when I eat it. If you are looking for a soup that is a little bit different from the norm, then this is it. I served it with zucchini bread muffins that were in our freezer, but a good grilled cheese sandwich, tuna salad sandwich, or cornbread muffin would be the perfect partner for this soup. Oh, and this soup is dairy free, so it’s paleo friendly.
I should add that I roasted my butternut squash in the oven for about 1 1/2 hours at 350 degrees. However, a time saver would be to cook it in the microwave. I prepped the squash by rubbing it with olive oil and liberal amount of salt and pepper.
Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, chopped
- 1 baked butternut squash removed from its rind
- 2 14-ounce cans chicken stock (can use more depending on the amount of squash you have)
- Salt and pepper to taste
- Sour cream (optional)
- Parmesan cheese (optional)
Instructions
- Add olive oil onion to a heated Dutch oven and cook onion till tender.
- Add baked butternut squash
- Add chicken stock
- Add salt and pepper
- Combine ingredients and simmer for five minutes. Then either use an immersion blender to blend the soup ingredients to a smooth consistency or add ingredients to a blender or food processor.
- Top with a dollop of sour cream or some Parmesan cheese, if desired.

With only four ingredients, plus seasonings, this soup is clearly easy and quick to make. I use this immersion blender, which I received as a gift and love. If you don’t own one, you might want to consider making it a part of your kitchen appliances. However, a blender or food processor will both work, but will make clean-up a little harder.

Add sweet potato and 2 carrots to the mix. It will be so much better! Add ginger for a little zing.
