I have a confession to make. I am totally addicted to bananas. I eat two a day everyday. It’s the first thing I eat when I walk into the kitchen each morning, and then I will have one as a late afternoon snack. I sometimes even eat one in the middle of the night if I am having trouble sleeping. I like them on the greenish side rather than too ripe. In fact, I don’t like to eat them if they are too ripe. I make multiple trips to the grocery each week just so I will have plenty of bananas on hand. To me, bananas are the perfect fast food and the perfect pre-workout food. I can’t imagine starting my day without one. Giving up my morning banana is the reason I am not interested in intermittent fasting.
If bananas ever get the chance to get too ripe in my kitchen, then we use them in other ways. Mike will put them in his morning smoothie, or I will bake banana bread, banana muffins, or banana cake with them. Today we are sharing with you a delicious and somewhat easy banana cake that is baked in a bundt pan. I found this recipe here. I added pecans and chocolate chips to the recipe and made a glaze for the top, but those additions are totally optional.
Banana Cake
Ingredients
- 1/2 cup butter
- 1 1/2 cup sugar
- 4 eggs
- 1 cup sour cream
- 3 cups sliced banans
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups flour
- 1 cup pecans or walnuts (optional)
- 1 cup chocolate chips (optional)
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Spray a 10 inch Bundt pan with non-stick cooking spray.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the sliced bananas, sour cream and baking soda. Beat in the flour. Pour batter into prepared pan.
- Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

I added a glaze to this banana cake using a cup of powdered sugar and three tablespoons of milk. You can add more or less milk depending on the consistency you want to have.
Our son was visiting when I baked this cake, and he was crazy about it. It is moist and full of flavor. It’s perfect for a fancy dinner party or for the family on a weeknight. Enjoy.
