Irish Shepherd Pie

Are you having trouble coming up with a special meal for St. Patrick’s Day?  Do you want to fix something instead of the traditional corned beef and cabbage?  If so, we have a delicious solution to your delimma.  I don’t make too many casseroles, but for St. Patrick’s Day, I will.  I learned through my 23 and Me results that I have a bit of Irish blood in me, and I want to give a nod to my heritage.  So, I found a recipe for Irish Shepherd Pie on allrecipes.com, and then put my own spin on it.  The recipe called for ground lamb, but since I don’t like lamb, I used ground turkey instead.  The recipe also had a complicated recipe for mashed potatoes, but I just made mashed potatoes like I always do and added shredded cheese to the top.  If you are looking for a good recipe for St. Patrick’s Day, this Irish Shepherd Pie is very good.  Pair it with our recipe for Irish soda bread.  If you are also looking for a festive appetizer, our spinach hummus will check that box.

Irish Shepherd’s Pie

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, chopped
  • 1 pound ground turkey
  • 1/3 cup all-purpose flour
  • salt and ground black pepper to taste
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon paprika
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon ketchup
  • 3 cloves garlic, minced
  • 2 1/2 cups water, or as needed
  • 1 (12 ounce) package frozen peas and carrots, thawed (I used peas and corn)
  • Your favorite mashed potatoes
  • 1/4 pound shredded cheese (I used sharp cheddar)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Place olive oil and butter in Dutch oven over medium heat. Stir in onion and ground turkey; brown the meat, breaking it up into small crumbles as it cooks, about 10 minutes.
  3. Stir in flour until incorporated, then mix in salt, black pepper, rosemary, paprika, cinnamon, ketchup, and garlic; cook and stir until garlic is fragrant, 2 to 3 minutes.
  4. Stir in water and scrape up any brown bits from the bottom of the Dutch oven. Reduce heat to medium-low and bring mixture to a simmer; cook and stir until thick, about 5-6 minutes.
  5. Remove turkey mixture from heat and stir in peas and carrots until combined.
  6. Spread turkey mixture into the bottom of a 9x13-inch baking dish and set aside.
  7. Spread mashed potatoes over the top. Spread shredded cheese evenly over the potatoes.
  8. Bake 25 to 30 minutes.

This dish is really tasty, friends.  The leftovers are spot on, too.  In fact, it seemed to have a little more flavor the next day.  If you are on the lookout for a recipe for St. Patty’s Day, then this Irish shepherd pie will do the trick.  If you make it, be sure to post it on social media, and tag us.  And by the way, I used peas and corn because I didn’t have a single bag of peas and carrots in the freezer.

I am meeting Jordan and Little Miss today at my parents’ house.  They will so enjoy spending a weekend with their daughter, granddaughter, and great granddaughter, and we will enjoy being with them.  Happy St. Patrick’s Day, everyone.

    The other day I made a trial run of the wonderful Irish Brown Bread I have been raving about since my visit to Dublin. It was excellent and I am making 2 loaves tonite to share. Super good, super easy and a real addition to my recipe file.
