I love to serve a dessert that is made in its own little dish. It makes a nice presentation and sort of tells the person who is about to eat it that he or she is special. Our neighbor had the misfortune to break her leg recently, and I made an apple crisp to deliver to her along with some magazines. I ended up with too many peeled apples and too much crunchy topping and decided to make individual apples crisps for Mr. Right and me. They were a perfect finale to our Saturday evening dinner, and they were just the right size. And the best thing is that it made Mr. Right feel extra special, which he is. I know that apple crisps might seem like a fall dessert, but they sure did taste great on a spring evening, too.
INDIVIDUAL APPLE CRISPS
2 servings
3 cups peeled and finely chopped apples
3/4 cup sugar
2 tablespoons flour
1 teaspoon cinnamon
pinch of salt
1 cup uncooked oats
1/2 cup flour
3/4 cup brown sugar
1 teaspoons cinnamon
Pinch of salt
4 tablespoons butter
Cooking spray
– Heat oven to 350 degrees. Spray individual ramekins with cooking spray.
– In a mixing bowl, combine prepared apples, sugar, flour, cinnamon and salt.
– In another bowl combine oats, flour, brown sugar, cinnamon and salt. Cut in butter.
– Put apple mixture into the ramekins and top with the oat mixture. Bake till apples are tender, about 25 to 30 minutes.
Can be served warm or cold.

This sounds yummy, and pretty healthy, for a dessert.I’m going to make it tonight. I made these years ago, but forgot about the recipe recently, where the recipe required you to core the apples and put the crumb topping in the hole made from removing the core.:)
