Since the Kentucky Derby is tomorrow, and I live in the Bluegrass State, I thought it would be fun to share one of the most popular Derby recipes with you. We here in Kentucky know that there is only one Derby pie, and the Kerns Company has all of the legal rights to that name. So, if you call your chocolate chip/pecan pie a “Derby Pie”, you are breaking the law. That explains why, when you google “Derby Pie”, you will get pies with all sorts of names. It also explains the title of this blog entry.
So, here is a recipe for a similar pie. Enjoy it while you sip your julep and watch the race. And, I hope your horse wins!
NOT Derby Pie
1 unbaked pie crust
1/2 cup white sugar
3/4 cup brown sugar
3/4 cup Karo light corn syrup
4 large eggs, slightly beaten
1 1/2 teaspoons vanilla
1/4 cup bourbon, optional
3/4 cup chocolate chips
1 1/4 cup pecans, chopped
Heat the oven to 350 degrees.
Mix sugars, corn syrup, eggs, vanilla, and bourbon with a mixer until well blended. Then, by hand, fold in the chocolate chips and pecans.
Pour into the prepared pie crust and bake for 50 – 60 minutes.
Serve with whipped cream, if desired.

We in Lexington, love of Derby Day Mint Juleps, old ham biscuits( a little somethin’salty to take the sweet taste out) , and Derby Pie–the is the perfect recipe. It is the ultimate sugar and salt combo
