Here in Kentucky, there is a delicious pie that we like to eat on Derby Day, which is tomorrow in case you haven’t noticed. However, because of copyright laws, etc., we are not allowed to call it Derby Pie. A bakery owns the rights to that name. That’s okay, though. Today I have a recipe for a pie that is just like (ahem) Derby Pie, but instead of being a pie, it’s a tart. It seems that I like to make tarts lately. As I explained in this post, it makes people feel a little bit special when they have their own little dessert to munch on. If you like pecans and chocolate, then you will love these Derby Day tarts, and so will anyone that you serve them to. This is basically a pecan pie with chocolate chips and bourbon.
DERBY DAY TARTS

1 unbaked pie crust (I purchased mine)
1/4 cup butter
1/2 cup sugar
1 cup corn syrup
1/4 teaspoon salt
3 eggs
1 cup pecan halves
1 cup semi-sweet chocolate chips
2 tablespoons bourbon (optional)
Whipped topping (optional)
Preheat oven to 350 degrees.
– Cut pie crust into quarters, and fit them into four individual ramekins. You might have to do some “cutting and pasting.”
– Cream together butter and sugar till fluffy
– Add corn syrup and salt and beat well.
– Add 3 eggs, one at a time, beating well after each addition
– Stir in pecans, chocolate chips, and bourbon.
Divide mix into four parts and pour into each ramekin. Bake 20 to 25 minutes. Be sure not to over bake. Can be served warm or cool with a dollop of whipped cream or topping.
This is a really delicious dessert that is rich and sweet. Mr. Right and I often share one. Okay, friends, tomorrow is a big day in these parts. We hope your horse is a winner!
