We are back again today with a pantry recipe that you will certainly enjoy. This savory Dutch baby pancake was such a pleasant surprise to me. It, of course, used items that we had in our house already, and it was easy to make. However, it was also so good. I have had this recipe tucked away in my inspiration recipe file for a few years now, and just decided to make it for our weekly Sunday brunch. We both really enjoyed it. As you probably know, Sunday brunch is my favorite meal of the week to both cook and eat. It’s a change of routine, and in normal times, I look forward to making it after we walk home from church. This recipe is fancy enough to serve for Easter brunch. Add a side of grits or hash browns along with a fruit salad. You might want to add some lemon bread (I recommend this one) as a sweet. Everyone will leave the table satisfied and happy.
Ingredients

- 4 thick-cut bacon slices, chopped
- 3 large eggs, at room temperature
- 1/2 cup milk, at room temperature
- 1/2 cup all-purpose flour
- 1 tablespoon unsalted butter, melted and slightly cooled
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup grated sharp Cheddar cheese
- 1 tablespoon finely chopped fresh chives (optional)
Instructions
- Preheat oven to 425.
- Cook bacon in a 10 inch cast iron skillet till crisp. Remove from heat but reserve 1 1/2 tablespoons drippings in skillet.
- While bacon cooks, process eggs, milk, flour, melted butter, salt, and pepper in a blender till completely smooth, about 30 seconds.
- Return skillet to medium heat, let heat 1 minutes. Remove from heat and pour batter into skillet. Bake in preheated oven for about 18 minutes or until golden brown. Do NOT open oven while cooking.
- Remove from oven and immediately sprinkle with grated cheese. Return to oven for 1 to 2 minutes until cheese melts.
- Sprinkle with bacon and chives and serve immediately.
If you are a southern girl, then you are sure to have an iron skillet. If you need an iron skillet, then we recommend this one. Be sure to cure it first.
Despite these crazy times, why not set the table in a nice spring look and enjoy Sunday brunch? It will make the day a little more special even though we aren’t able to go to church.
