Today we are sharing with you a perfect summer recipe created by southern cook Paula Deen. Even though the recipe’s leading star is tomato, I’m not sure how healthy it is. You’ll notice it has its fair share of cheese and mayo. It is tasty, though. Just be sure to schedule a double work-out after you eat it!
TOMATO PIE
4 tomatoes, peeled and sliced
10 basil leaves
1/2 cup chopped green onion
1 unbaked pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Preheat oven to 350 degrees.
Place sliced tomatoes in colander and let them drain 10 minutes.
Layer the tomatoes, basil and onions in the pie shell. Season with salt and pepper. Mix the cheeses and mayo together. Spread mixture on top of tomatoes.
Bake for 30 minutes or till lightly browned.
Serve warm.
