I have a top five list of favorite foods, and one of them is broccoli salad. The fact that it is made from one of the super foods is just a bonus. I love it and could eat it every single day. One of the great things about this salad is you can pretty much add any veggies you have on hand to it, and it is good to go. I know there is a traditional recipe, but this is the way I make one of my favorite foods. Something that thrills me is that broccoli is one of Little Miss’s favorite foods, too. Great minds think alike.
Broccoli Salad
Ingredients
- 2 big bunches of broccoli, washed and chopped
- 1 bundle green onions, chopped
- 1/2 pound crisply fried bacon, broken into crumbles
- 1 small package dried cranberries
- 3/4 cups sunflower seeds
- 3/4 cups shredded cheddar cheese
- 1 cup mayonnaise
- 1/2 cup sugar
- 2 tablespoons white vinegar
- Salt and pepper to taste
Instructions
- Combine the first 6 ingredients in a salad bowl. Mix together the mayonnaise, sugar, and vinegar. Pour over salad and stir. Add salt and pepper. Can be served immediately but will keep in the fridge several days covered.
- For more variety, add chopped carrots, chopped cauliflower, chopped pecans, feta cheese, and/or raisins.
