Well, here we are a few weeks into the new year. How are things going with your resolutions? I love making goals at the beginning of each year. This goes back to my high school days. My friend Amanda and I would really get into this. We made our goals for the new year and then put them on posters that we decorated with markers and stickers. Then we hung them in our rooms. While I am no longer pulling out a big poster board, I do write down goals in my planner, and I must admit that they are all over the place. They range from things like painting the inside of two closet doors (why can I not bring myself to finish those two doors?), to living a healthy lifestyle, and doing the best I can to make tasty, quick, and easy meals that are healthier for my family.
I have learned that with Little Miss now in the picture, I am looking for faster, healthier meals. I have mentioned that she is a great eater, so I want to prepare healthy choices for her as much as possible. I don’t want to spend as much time as I once did in the kitchen, and I want to use more vegetables. I guess that makes my resolutions, “Vegolutions!” Also, I need meals that are quick and easy and help our family to continue to eat healthy. I also do not want our meals to taste blah. I want my family to enjoy and appreciate delicious foods. I thought today I would share a tasty and super easy recipe for you to cook for your family. It’s a loaded sweet potato, and I think you will love it.
The other day I ran into Walmart to pick up a few things, and I grabbed some MorningStar Farms® Grillers® Crumbles™ and MorningStar Farms® Meal Starters® Chik’n Strips along with some Great Value™ frozen veggies. I thought these foods would be a great way to incorporate more vegetables into our meals. Several other people were buying the same products. I guess I am not the only shopper who realizes these foods are not just for vegetarians but for all of us!

This recipe (shown below) is super tasty, and you can mix and match the veggies and MorningStar Farms® products. They are perfect for the busy families, working people, and anyone who is health-conscious. These are some of the items I purchased.
This is how I prepared this delicious recipe (below.) After chopping the onions and mincing the garlic, I cooked them in the olive oil. Then I added the MorningStar Farms® Grillers® Crumbles™ which is an “as is” meal solution.
Then I added the water and spices, stirred, and covered.
After it cooked for a few minutes, I added the corn and stirred.
Once the sweet potatoes were cooked, I opened them, and added the mixture and toppings.
Loaded Baked Sweet Potato
Ingredients
- 4 sweet potatoes
- 1 package of Great Value™ Frozen Corn
- MorningStar Farms® Grillers® Crumbles™
- 1/3 cup water
- 1 onion, chopped
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1/4 teaspoon onion powder
- 1/4 teaspoon oregano
- 1/2 teaspoon paprika
- 1 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Toppings (options - cheese, cilantro, avocado, tomatoes)
Instructions
- Preheat oven to 400.
- Wash potatoes and bake for 45 minutes.
- Add oil to a medium skillet along with garlic and onions and cook on medium high heat till translucent, around 4 minutes.
- Add MorningStar Farms® Grillers® Crumbles™ to onions and garlic along with water, onion powder, oregano, paprika, cumin, salt, and pepper. Stir. Then cover and cook for 4 minutes.
- Stir in corn.
- Open the baked sweet potato, and add the fillings and toppings.
- Enjoy!
