Pasta with clam sauce is an easy recipe to fix and is so loaded with flavor that you might dream about it. It’s the comfort food that warms you to the bones on a cold winter’s evening. Add a side salad or veggie, and you have a wonderfully delicious well-rounded meal. It will get you in and out of the kitchen in no time flat.
Pasta with Clam Sauce
Serves 4
2 (6.5 ounce) cans chopped clams
1 (10 ounce) can fancy whole baby clams
1 large garlic clove, minced
2 tablespoons olive oil
3 tablespoons cornstarc
1/2/teaspoon salt
1/8 teaspoon ground black pepper
Grated Parmesan cheese (optional)
Chopped parsley (optional)
1 (16 ounce) box pasta (I used angel hair)
Drain liquid from the 3 cans of clams into a small bowl and whisk in 3 tablespoons corn starch. Set aside.
Heat olive oil in a skillet on medium low heat and add minced garlic. Saute till garlic softens. Stir frequently to prevent burning. Increase heat to medium and add the clam juice mixture and stir till it begins to thicken. Add clams, salt, and pepper. Stir till the mixture is hot and has thickened.
Meanwhile, cook pasta according to directions. Drain. Divide cooked pasta into 4 servings and put on a plate. Top pasta with 1/4 of the clam sauce. Top with grated Parmesan and chopped parsley. Serve immediately with a veggie, and/or a salad.
