When I was at Mom’s a few weeks ago, we kept up some of our traditions like breakfast at the French cafe, lunch at our favorite tea room, browsing at some consignment shops and antique stores, checking out the latest at Target, and creating some new (to us) recipes.
Mom thought it might be fun to take the traditional crostini and give it a Greek twist, and I am happy to report that it was a delicious success.
Our fave French cafe has added a market, and after we ate breakfast, we did a little shopping there.
We marveled at how charming and inviting it looked with its fresh vegetables, flowers, meats, breads, and herbs all displayed as if they were in Paris, except the labels were in English.
We decided that market would be the perfect spot to purchase the ingredients for our Greek crostini.
While we were at Target, we bought a new item by Clorox called Clorox Green Works Pump ‘n Clean, which is found in the natural section of the cleaning aisle. Clorox has a complete line of natural cleaning products that can be used throughout your home. I have used the All Purpose Cleaner and Glass and Surface Cleaner to make some surfaces sparkly in my home. I like the fact that no harsh chemicals, fumes, or residues are left. According to its label, it can be used with most foods (not meat or fish), so we decided to try it out while we chopped the veggies for our crostini.
Making a Greek crostini couldn’t be simpler. First, you slice up a loaf of French bread, brush each slice with olive oil on both sides, and bake in a 350 degree oven for five minutes on each side.
Meanwhile, you chop the vegetables. We kept our bottle of the Clorox Pump ‘n Clean nearby so we could easily wipe off the knife and cutting boards.
It’s pretty much one hand and one pump, so you can clean while you cook.
Then just wipe the area that needs to be cleaned up.
For the recipe, we finely chopped cucumber, onion, tomatoes (seeds removed), and garlic. We drained them in a colander in the sink for a few minutes. Then we put the chopped veggies in a bowl, added feta cheese, olive oil, dried oregano, and salt and pepper.
When we were ready to have our snack, we topped our toasted baquette with the veggie mixture. It was so good and a nice change from the traditional Italian bruschetta. Using the Clorox Clean ‘n Pump helped make clean-up a breeze, and that was a great help.
GREEK CROSTINI
1 baguette, sliced
Olive oil
1/2 onion
1 cucumber
2 tomatoes, seeds removed
2 cloves garlic
1/2 teaspoon dried oregano
1 tablespoon olive oil
1/4 to 1/2 cup feta cheese
Salt and pepper to taste
Brush both sides of the baguette slices with olive oil and bake them for five minutes on each side in a 350 degree oven.
Chop veggies and drain for a few minutes to remove excess liquid. Then gently stir in feta cheese, oil oil, and oregano. Add salt and pepper. When ready to serve, top each baguette slice with a tablespoon of the veggie mixture. Eat right away so the bread will be nice and crisp.
