Happy Friday! I usually eat the same thing for lunch on most week days – soup in the winter and hummus veggie sandwiches in the warmer months. I recently found a chickpea sandwich filling recipe on Allrecipes and thought it was a good time to change up my lunch routine.
CHICKPEA SANDWICH FEELING
(source – Allrecipes.com)
-1 (19 ounce) garbanzo beans rinsed and drained
-1 stalk of celery chopped
-1/2 onion chopped
-1 Tbsp mayonnaise
-1 Tbsp lemon juice
-1 tsp dried dill weed
-salt and pepper to taste
Drain and rinse chickpeas. Put chickpeas in a bowl and use a fork to mash to your liking. Mix in celery, onion, mayonnaise, lemon juice, dill, salt and pepper to taste.
Note: I recommend serving this filling in a pita or wrap. I tried it with regular bread at first, and the chickpeas rolled. Make sure you smash them enough.
