Mr. Right and I just returned home after riding our bicycles 10 days in Florida. We were looking for some warm weather. While we were there, he discovered a recipe for orange meringue pie in a magazine. I have never heard of it before, have you? I decided it would be one to try, so when we got home, I bought some oranges at Kroger (forgot to get them in Florida) and found a recipe online at www.allrecipes.com. It was really easy to make, and he liked it so much that he had two pieces of pie for dessert that night. By the way, I doubled the filling recipe so it would be nice and thick.
ORANGE MERINGUE PIE

3/4 cup sugar
1/3 cup corn starch
1 pinch salt
1 cup orange juice
1/2 cup lemon juice
1/4 cup water
4 eggs separated
4 tablespoons butter
2 teaspoons grated orange rind
1/2 cup diced orange segments (optional)
1/2 cup sugar
1/4 teaspoon cream of tartar
– Bake your pie crust at 450 for 10 minutes and allow to cool.
– In a medium pan, mix sugar, corn starch, and salt. Add orange juice, lemon juice, water, and egg yolks. Cook over medium heat and stir constantly till it boils. Cook about two to four minutes longer. Remove from heat and stir in butter and grated rind (and orange slices, if desired). Pour into pie crust and allow to cool.
– Follow your favorite meringue recipe and bake in a 350 degree oven till meringue is set, about 10 – 15 minutes.
