Who doesn’t love a big ole stack of buttery, gooey pancakes? I have been making this recipe for several years now, and I will never go back to the boxed pancake mix again. In fact, the ingredients have been in my head for so long that I don’t remember the original source. These cakes are easy, convenient, inexpensive, and really good. I bet you have all of the ingredients in your kitchen right now.
PANCAKES
1 1/2 cups all-purpose flour
3 1/2 teaspoons of baking powder
1 teaspoon salt
1 1/4 cups milk
1 egg, slightly beaten
3 tablespoons melted butter
1/2 teaspoon vanilla
Mix the dry ingredients. Make a well and add the milk, egg, butter, and vanilla. Mix till combined. Some lumps might still be there. Don’t over mix.
Cook on a heated griddle by adding 1/4 cup of batter for each pancake. When bubbles appear, flip.
OPTION:
I like to add some chopped banana (not too ripe) and shredded coconut to give them a tropical flair. It’s the best way to eat a pancake.
