Fall is here now, and so it is finally time for pumpkin everything. Last week Mom shared a recipe for pumpkin bread (here), and today there is more pumpkin goodness. I discovered this recipe from the King Arthur test kitchen. It is a must-try and a great breakfast for those crisp, fall mornings. Welcome to Baked Pumpkin Donuts.
First, you need a donut pan which you can buy at Bed, Bath, and Beyond.
Then, all you have to do to get these delicious treats is to follow the directions in this recipe:
BAKED PUMPKIN DONUTS
Place the following in a mixing bowl:
– 1/2 cup vegetable oil
– 3 large eggs
– 1 1/2 cups granulated sugar
– 1 1/2 cups pumpkin purée (canned pumpkin)
– 1 1/2 teaspoons pumpkin pie spice,
– 1 1/2 teaspoons salt
– 1 1/2 teaspoons baking powder
Beat everything together until smooth.
Add 1 3/4 cups + 2 tablespoons all purpose flour., stirring just until smooth.
Fill donut pan 3/4 full and bake in a 350 preheated oven for 15-18 minutes.
Let cool for a couple minutes but while still warm put in a bag mixed with Sugar and pumpkin pie spice and shake.
Enjoy, and have a great week-end.
