We are about to wrap up day four of Mom’s visit, and we spent most of the day working on outdoor projects. Mom weeded and planted flowers while I did a major curb appeal project that added some more pizzazz to our 1928 bungalow. We’ll be showing you the final results Monday. Meanwhile, I had some friends over for drinks and tapas last week, and I made these delicious spinach balls. They were easy and a little bit nourishing. We all decided they would probably make good patties for anyone who wants a burger sensation without the meat.
SPINACH BALLS

1 10 ounce package frozen chopped spinach, thawed and drained (I used 16 ounces)
2 cups finely crushed herb-seasoned dry bread stuffing mix
1/2 cup grated Parmesan cheese
2 teaspoons garlic powder
1/2 teaspoon ground black pepper
1 teaspoon Italian seasoning
1/2 cup melted butter
3 eggs, beaten
– Preheat oven to 350 degrees.
– In a large bowl, combine spinach, stuffing mix, Pamesan cheese, garlic powder, black pepper, Italian seasoning, melted butter and eggs. Shape into walnut-sized balls and place on a baking sheet.
– Bake in the preheated over for 20 minutes, or until heated through and browned.
We have a big week-end planned. Tonight we are off to Shakespeare in the Park, and on Sunday we will be cheering on Mr. Spring in a half Ironman. Somewhere in between we are going to squeeze in “Jersey Boys”. Mom had every single one of the Four Seasons’ albums when she was a teen, and we have both seen the musical on Broadway.
